The subject of research - the characteristics of melting and sealing of individual oils and the appearance of foreign fatty impurities. The purpose of the work is to develop a method for qualitative and quantitative determination of foreign fatty impurities in oils using the method of differential scanning calorimetry. Methods of investigation: thermograms of melting and clamping of individual oils and their mixtures with foreign impurities were obtained using a differential scanning calorimeter Q20; the characteristic parameters of melting and hardening peaks are determined using TA Universal Analysis software package; experimental study planning, mathematical modeling and processing of experimental data on the dependence of the mass fraction of foreign fatty impurities on the characteristics of the melting and hardening peaks is performed in the software package environment of Statistica, Microsoft Excel and MathCad. The scientific data concerning changes in the parameters of melting and hardening of sunflower oil as a result of the introduction of foreign fatty impurities - pork and beef fats. The mathematical models, which represent the dependence of the mass fraction of foreign fat admixtures in sunflower oil on the characteristic temperatures of the melting and hardening peaks, are calculated.
