A list of probable physical, chemical and microbiological hazards that arise at different stages of production is made. Critical control points of production are defined. The concept of creating a computerized expert system and a block diagram of solutions for the determination of critical control points of safety in accordance with the principles of the HACCP system has been developed. The methodical recommendations for "Improving the technologies of production of food eggs and chicken meat in small and medium-sized enterprises based on the principles of the system of HACCP" are developed, which include flowcharts of advanced technological processes, procedures for control of dangerous factors and corrective actions in accordance with the principles of the HACCP system, computerized models of expert systems for the determination of critical control points and control procedures that ensure the receipt of safe products, increase its overall economic efficiency in robnytstva. According to the results of approbation of the improved technologies, the economic effect was: in the production of food chicken eggs - 9.1 UAH. per 1 bearer; at the production of chicken meat - 13.9 UAH. per 1 goal.
