On the basis of the results of the performed researches, the technology of production of frozen semi-finished products for the production of a beverage was developed and scientifically substantiated. It was established that the study sample had two ranges of crystallization and recrystallization of frozen moisture. Freezing at -20 ± 2 ° C contributes to full preservation of products, and further keeping at temperatures within such limits provides storage for a long period of time. The mass fraction of frozen water of the investigated sample is calculated, which is 68.6%. The conducted experimental researches confirm that freezing can preserve the nutritional value of the semifinished product for the strip. Conditions and guaranteeing terms of storage are established: during 9 months in refrigerating chambers at a temperature of minus 18 ° С and relative humidity of air no more than 95%.
