The aim of the work is to study the molecular genetic properties of pathogens of toxicoinfections and toxicosis (staphylococci, salmonella, Escherichia and campylobacteria) for the introduction of modern methods of microbiological and molecular genetic analysis and new safety standards for major food groups. Research methods - microbiological, biometric. Staphylococci, which were isolated from dairy farms are a significant reservoir of antimicrobial resistance genes that can contaminate the milk and may be transmitted to humans. Therefore, it is necessary to monitor the release of not only MRSA, but also other β-lactam antibiotics resistant staphylococci. It was found that 17.8% of cultures of S. aureus var. hominis contained a gene for resistance to methicillin, which is 1.8 times (p≤0.05) more than cultures of S. aureus var. bovis. All the MRSA which were studied produce enterotoxins. Of the investigated vancomycin-resistant enterococci of raw milk, only 32.8% of cultures contained the vancomycin resistance gene, and of sour milk cheese - 36.1% of the studied cultures. Enterococci secreted from sour milk cheese show increased resistance to antibacterial drugs compared to enterococci isolated from raw milk. Microorganisms S. aureus var. hominis is 1.3−1.8 times (p≤0.05) more resistant to antibiotics compared to strains of S. aureus var. bovis. In frozen fish with residual amounts of antibacterial substances, a microflora resistant to the detected antibiotics is formed. Product Description popup.authors Boltyk Nataliia P.
