The purpose of the work was to determine the content of nitrates in milk and dairy products, to substantiate the hygienic standard of their amount in relation to European requirements and to develop ways to reduce the content of nitrates in milk raw materials during its processing. Research methods - physical, chemical, microbiological, statistical. 73.7% of drinking milk, which is sold in the retail network in the winter-spring period, and 91.4% of milk in the summer-autumn period, and dairy products, respectively, 91, correspond to the standard standards for the content of nitrates up to 10 mg / kg. 8% vs. 98.7%. Scientifically grounded safe standard for the content of nitrates in raw milk, which is harmonized with European requirements and allows you to process milk for any dairy products, including baby food. A methodology for assessing the content of nitrates in raw milk is proposed, taking into account the European standard. It has been established that the process of milk denitrification strain S. carnosus No. 5304 in the amount of 103 CFU / cm3 reduces the nitrate content in the samples of the First group - by 1.3 ± 0.05 mg / kg, the second 11.0 ± 0.2 and the third 21 4 ± 0.3 mg / kg, respectively. According to the denitrification of S. carnosus milk in the amount of 104 CFU / cm3, it was found that in the samples of the First group it showed their trace (0.1 mg / kg), in the second group 5.6 ± 0.2 mg / kg, and in the third 15 9 ± 0.3 mg / kg, respectively. According to the denitrification of S. carnosus milk in the amount of 105 CFU / cm3, it was established that nitrates were practically absent in the samples of the First and Second groups, their amount did not exceed 1 mg / kg, and in the third it was within 10.7 ± 0.3 mg / kg.
