The subject of the study is the organoleptic, physico-chemical characteristics of seeds of new lines and hybrids of domestic selection sunflower and their oils. The purpose of the work is to study the physicochemical parameters of seeds of new lines and hybrids of domestic selection sunflower. To achieve the specified goal of work, it is necessary to perform the following tasks: analysis of the current state and prospects of growing seeds of sunflower hybrids; studies of the fatty acid composition of oil obtained from seeds of new lines and hybrids of domestic selection sunflower; studies of physical and chemical parameters of oils obtained from seeds of new lines and hybrids of sunflower of domestic selection. Research methods - research was conducted using methodological approaches used in international practice and not refuting the requirements of DSTU. The planning of the experiment, the processing of research results was carried out using Microsoft Excel software packages. As a result of the research, informational data on the physicochemical and nutritional properties of oils from seeds of new lines and sunflower hybrids were obtained.
