Therefore, the development of dry milk formulas of high nutritional value by involving in the composition of raw materials useful nutrients, including carbohydrates, milk proteins, vegetable fats and enriched with microorganisms with probiotic properties, is an urgent task today. The component composition of milk formulas is selected. The influence of the type and dose of the carbohydrate component on the drying efficiency of mixtures was studied. The influence of homogenization of liquid model mixtures on the dispersion of final dry products is investigated. The microstructure of the obtained samples was studied. Organoleptic, physicochemical and structural-mechanical properties of dry samples were determined. The effect of different doses of dry whey protein concentrate on organoleptic, physicochemical and physico-mechanical properties of dry mixtures was studied. A study of the protein composition of dry mixes. The biological value of mixtures, the balance of the composition of essential amino acids in protein are determined. The influence of vegetable oil on the fatty acid composition and physical and mechanical properties of dry milk multicomponent mixtures has been studied. The ability of different strains of microorganisms to survive at different temperatures of drying of multicomponent mixtures has been studied.
