These strains were represented by various technological stages (fresh grapes, fresh grape juice, fermentes juice, etc.) Wine yeast strains for DNA isolation of various origins, including Odessa region - 6, Kherson - 2, Transcarpathian - 2, the collection of the Institute of Genomics and Food Biotechnology NAS Ukraine from other plants – 5 were selected. DNA of 15 wine yeast strains was isolated, including 4 obtained on red technical grape varieties breeded at Tairov Institute. DNA bank of wine yeast strains Saccharomyces cerevisiae of different regional origin and source (culture) of selection was created, microsatellite analysis was performed and a database of of microsatellite loci allelic characteristics of wine yeast strains Saccharomyces cerevisiae was created.
