Purpose and results of work: The purpose of this project is to study new technologies and recipes and manufacture experimental batches of environmentally friendly domestic competitive products for processing fruits and berries with high biological value in accordance with the requirements of European Union directives. For the reporting period 2019 - 2020 chemical and technological evaluation of new varieties of cherries, apples, black currants, raspberries, plums, rowan, from the gardens of the Institute of Horticulture NAAS, as well as grown in Poltava, Sumy, Kiev and Zaporozhye regions. As a result of research, 42 samples of primary components and recipes of fruit and berry soft drinks and wines were made, the best of which were selected and presented for quality assessment to the Central Tasting Commissions of the wine industry in the Ministry of Agriculture and Ukrvinprom. received 3 medals. The processing unit together with scientists of the institute and Sumy DSS prepared a project in accordance with the program "Start Up promotion" and is a finalist of the competition "Sikorsky Challenge".
