The collection of industrial strains of Institute of Food Resources NAAS was replenished with 28 biologically active strains, three of which were deposited in the Institute of Microbiology and Virology NAS. Technologies of single-species bacterial concentrate Iprovit-S.thermophilus - producers of exopolysaccharides, natural thickeners of dairy products consistency have been developed; polyspecific bacterial concentrate Iprovit-Bifidolux. Normative documents have been developed: Changes № 6-7 to TU U 15.5-00419880-100: 2010 “Dry and liquid fermenting culture. Technical conditions”. Scientific results were introduced in the educational process of the Department of Meat and Milk Processing of the Institute of Postgraduate Education of the National University of Food Technologies of the Ministry of Education and Science of Ukraine, at a number of milk processing enterprises of Ukraine.
