Subjects of research: different types and classes of wheat grain, wheat gluten complex, wheat quality indicators, grain drying and processing by electromagnetic field, formation of batches of wheat for food purposes. The purpose of the work is to learn the properties of wheat grain and their changes from various factors, which will increase the efficiency of food batches and their quality. Research methods - chemical, physical, electro physical, microbiological, statistical and mathematical. There were indicated soft and hulled wheat quality research results from different regions and years of harvest, including affected by the bug-turtle, their gluten complex, the laws of the kinetics of the process of drying and heating grain, the effect of processing by an electromagnetic field and storage on microbiological indicators of grain quality. Ways of forming wheat of optimal composition and quality from wheat grain of different classes are considered. Scope of application - grain-processing and grain processing enterprises and farms of the agro-industrial complex (AIC), engaged in the production, storage and processing of grain.
