The purpose of the study is to scientifically substantiate a system of preventive measures for optimizing nutrition for certain age categories of the population in selected districts of the Odessa region and to establish relationships with working capacity and the main components of a lifestyle. Research methods - calculation method (analysis of menus and menu-layouts, carbohydrate content, energy value); method of questioning (questionnaire "SINDI"); chemical - laboratory methods, atomic absorption method (metal content), colorimetric method (nitrate content). Health indicators are studied using anthropometric methods, hematological methods (the content of hemoglobin, erythrocytes, leukocytes), biochemical methods (the content of methemoglobin in the blood, iron in the blood serum). The results will be processed using generally accepted mathematical and statistical methods. 1. A significant shift in the nutritional status of the subjects studied towards excess was established, with the predominant use of high-calorie food products and leads to an increase in the incidence of alimentary diseases of types 1 and 2. 2. Animal protein deficiency, polyunsaturated fatty acids, many vitamins (found in the majority of half of the population), deficiency of a number of minerals (especially calcium, accompanied by the development of osteoporosis and increased bones frigility; iron - mainly for pregnant women and young children, which is accompanied by the anemia development, iodine - especially for children during the period of intensive development of the central nervous system, fluoride, selenium; biologically active substances deficiency (BAS) in the diet, which leads to the development of alimentary-dependent diseases, as well as a general decrease in the body's immunity. 3.
