One of the mechanisms of plant resistance to abiotic stresses is to increase the proportion of unsaturated fatty acids in the composition of membrane phospholipids. The genes of acyl-lipid desaturases of cyanobacteria were used because they are phylogenetically similar to those enzymes that are present in the plant organism and have a clearly defined mechanism of action and substrate for reaction in the plant organism. Adaptation and response to biotic stimuli is provided by stimulating the expression of theonine proteins, defensins, as well as so-called PR-proteins (pathogenesis-related proteins). In total, PR proteins are divided into 18 groups, among which are thaumatin-like proteins. Taumatin is a protein substance widely known as a sweetener and is used in pharmaceuticals and cooking. It is naturally produced by the plant Thaumatococcus daniellii, in response to contamination of fungal and viral stimuli. The aim of the work was to obtain transgenic plants of the families Solanaceae and Aesteraceae, which are known for their representatives. During the project the following plants were obtained: potatoes Solanum tuberosum, which contain in its genome the transgene of thaumatin tmII; pepin Solanum muricatum with desA desurase gene; lettuce Lactuca sativa L, containing in its genome transum taumatin tmII; tobacco Nicotiana tabacum, containing in its genome simultaneously the genes desA and tmII; potatoes Solanum tuberosum, containing in its genome simultaneously the genes desA and tmII tobacco tobacco tobacco plant Nicotiana tabacum, containing in its genome simultaneously genes desA, desC and tmII.
