The obtained results are compared with the data obtained by standard methods of determination. The results of the determination of glycerol using a biosensor based on immobilized glycerol oxidase showed not high accuracy in comparison with the data obtained by high performance liquid chromatography. Developed enzyme multibiosensor for the simultaneous determination of glucose and lactate, and a biosensor for the determination of ethanol can be used to control the quality of wine and wine materials with a high degree of reliability. Studies on the simultaneous determination of lactate, glucose and ethanol have shown that at this stage, they can not be achieved, as to determine the concentration of ethanol in wines need to take a larger aliquot than to determine other substrates due to much less in wine.
