Scientific novelty: proprietary recipes with functional ingredients have been developed, which allow to expand the range of functional food products; the most significant technological modes of obtaining beverages and confectionery products with non-traditional ingredients have been established; the peculiarities of the effect of sugars (fructose, milk sugar) on the metabolism of lactic acid bacteria were investigated, the choice of ratios of these components in the formulation of the proposed products was substantiated The purpose of the research is to develop improved formulations of functional food products of increased quality due to the addition of natural biologically active substances and cultures of microorganisms to the products Research methods: organoleptic (color, smell), physico-chemical (alcohol content, sugar, acidity, moisture), sanitary-microbiological (quantitative and qualitative research to determine BGCP, ZMCH and species diversity of the consortium). The main research results: a substrate for the growth of lactic acid bacteria was developed; a reduction in the calorie content of the fruit pastille was achieved; a new recipe for the production of a dietary confectionery pastille product and a functional drink was developed.
