The subject of the research is the technological properties of physiologically functional raw ingredients of plant origin and sugar replacers of polyols in the technology of sponge cake semi-finished products. The purpose of the work is to improve the technology of sponge cake for functional and dietary purposes using ingredients of vegetable origin and sugar replacers of polyols. Research methods are generally accepted and special organoleptic, physico-chemical, analytical, performed using modern devices and computer technologies. Task: an analysis of literary sources was carried out regarding the state of production of dietary and functional sponge cake with the possibility of their further implementation in hospitality industry establishments; the possibility of using powders from the fruits of sea buckthorn, viburnum and rowan as a source of essential ingredients was investigated; physico-chemical, structural-mechanical and technological properties of sugar replacers and their aqueous solutions were investigated; rational technological parameters of improved technologies of sponge cake semi-finished products are substantiated. Practical significance: directions for improvement of sponge cake semi-finished products were characterized; regulatory documentation was developed for new butter sponge cake semi-finished products that can be used in hospitality establishments. The obtained results can be used in restaurants and hotel enterprises to expand the assortment and recipe composition of confectionery semi-finished products and products and sweet dishes based on them.
