The aim is to develop a laboratory method for the isolation and purification of c- and g-type lysozyme from bird egg protein, to conduct a complex of physicochemical studies to establish the protein fractional composition, molecular weight of the isolated enzymes and study their biochemical and physicochemical properties: protein content, hydrolytic activity, pH and thermodependence, pH and thermal stability of activity, storage for a long time at low temperatures, antimicrobial activity. It was found that the usage of the method of thermal denaturation of impurity proteins is inappropriate due to the loss of activity of g-type lysozyme, in contrast to the c-type enzyme. G-type lysozyme was purified from African ostrich eggs using gel filtration (Sephadex G-50 carrier) and ion-exchange chromatography (KM-Sepharose carrier), an enzyme with a high degree of purity and hydrolytic activity was obtained. The biochemical and physicochemical characteristics of the resulting lysozyme have been studied. The antimicrobial action of c-type lysozyme has been established; it was shown that the enzyme has antimicrobial activity against 2 strains of Staphylococcus aureus, 5 strains of Escherichia coli, 2 strains of Pseudomonas aeruginosa, 2 strains of Candida albicans.
