The project is devoted to the creation of innovative technologies for the processing of plant raw materials into ecologically clean products for special purposes. This will allow solving the strategic problem of nutrition - eliminating the shortage of valuable physiologically functional ingredients, namely phytosterols, in the human diet, which will contribute to reducing the risk of a number of diseases, namely cardiovascular, oncological and other diseases.
The developed products of increased nutritional and biological value of special purpose can be recommended for mass consumption, health and preventive nutrition of various segments of the population, including military personnel, elderly people, etc.
