The subject of the research is animal and vegetable raw materials, including organic and hydrobionts, technological semi-finished products, encapsulated oleoresins, microelement enrichments, nanocomposites and functional-technological mixtures for the production of meat and meat-containing products. The purpose of the work is the scientific justification of resource-saving technologies of food products based on organically directed processing of products of animal origin, expansion of the use of protein-containing vegetable raw materials and products from hydrobionts for targeted products with a predicted shelf life. The results of the previous stage: the analysis of patent and scientific, regulatory and technical literature on the research topic was carried out, the effectiveness of enriching multifunctional concentrates and organically oriented animal and plant-based products with micronutrient complexes was substantiated, Formulations of the technological basis of protein-containing organically oriented food products based on raw materials of animal, vegetable origin and hydrobiont products were developed, and industrial testing of the developed technologies of sausage products and semi-finished products using elements of active packaging was carried out.
