The subject of research is the constituent elements of active packaging systems, physico-chemical and biological properties of food products and processes of interaction between packaging and products. The goal of the project is the scientific substantiation and development of active food packaging systems. Rational regimes, conditions of storage and adjustment of parameters depending on the type and type of packaging elements during the storage of cooked sausage products have been determined. The mechanism of interaction of the packaging elements with the internal gas environment was determined depending on the water activity (Aw) of the product. New methods and approaches have been developed to create innovative technologies for extending the shelf life of food products based on the use of active packaging systems and plant extracts in the technology of semi-smoked sausages with a multi-component composition of raw materials. This made it possible to extend the shelf life of semi-smoked sausages by slowing down the oxidative deterioration of the product, which reduces the quality and consumer value of sausages. The quality indicators of packaging materials with special properties used in active packaging systems were experimentally evaluated.
