This position is justified by the fact that, firstly, the operation of hotel and restaurant business entities in conditions of high risk influenced the need to revise the security components. Secondly, changing the target segment of hotel guests and restaurant visitors requires the use of adapted marketing technologies and approaches to pricing during martial law. Accordingly, the entities of the hotel and restaurant business, operating in new realities, should direct management efforts to the formation of strategies: adaptation and support of personnel; creation of safe conditions for guests and visitors, inclusiveness of service and personalized communication; "green economy" and frugal attitude to electricity, gas and water supply; activation of consumer tourists to safer regions (destinations). Therefore, scientific studies on monitoring the entrepreneurial activity of subjects of the hotel and restaurant business of Ukraine in the conditions of martial law are relevant.
