It was established that the majority of differentially expressed wheat grain proteins belong to the group of metabolic proteins, among which gliadins are the most threatening to health. The modern Sotnytsia wheat variety can serve as a germplasm donor for new, less toxic varieties. New approaches to the extraction and sequential enzymatic cleavage of differentially expressed proteins from wheat grain are proposed. PCR conditions were selected for the detection of the SBEIIa gene in order to identify hybrid forms of wheat that carry the HAW trait (high amylose content in wheat kernels). Selected forms of wheat positive for the HAW trait with a modified sequence of the SBEIIa gene. The design of primers to the variable regions of the SBEIIa and SBEIIb genes made it possible to develop a system for determining the expression of these genes in triticale, wheat and rye. The features of the expression of SBEIIa and SBEIIb genes in different organs of common wheat plants were analyzed and the features of the functioning of genes from different subgenomes were determined. The sequence and spatial structure of SBEIIA and SBEIIB proteins of rye and wheat were modeled. An experimental selection population F4/5 Himalaya 292 × Datcha was created (the Himalaya 292 whole grain barley variety was the source of the mutation in the sex6 locus), in which genotypes with a probable increased content of amylose in starch were selected. It was established that the investigated commercial varieties of onions do not have a clearly defined homozygous genotype for the genes involved in the formation of the CCHS.
