The purpose of the work is the substantiation and development of recipes and recommendations for the preparation of recipes for the extrusion-modified protein-fat mixture of quick preparation using oil raw materials. Research methods for the mass fraction of moisture and volatile substances in oil raw materials and extruded mixtures are determined according to DSTU 7621; protein mass fraction - according to DSTU 7169; the mass fraction of lipids and fiber - according to DSTU 7491; carbohydrate content - according to DSTU ISO 6493; ash content - according to DSTU ISO 5984; amino acid composition of protein - according to DSTU ISO 13903; the process of extruding mixtures of buttery protein-containing and grain raw materials was carried out on a PE-20 press-extruder. The rational amount of water that should be added to the mixture of raw materials has been experimentally established - about 10% of the mass of the mixture in terms of absolutely dry matter. The ratio of crushed oil raw material and raw material with a high starch content of the extrusion-modified protein-fat mixture of quick preparation is substantiated. The justified temperature of the extruded material in the pre-matrix zone should not exceed 150 °C. The lowest indicators of energy consumption are achieved at the maximum possible speed of rotation of the screw - 250 rpm. A rational ratio of the components of the base of the extruded mixture has been established. A technological scheme of production and Recommendations for manufacturers of oil and fat products on the technology and recipe of a quick-cooking protein-fat mixture using oil-protein, grain and dairy raw materials have been developed.
