Purpose of the work: The purpose of the first stage of the work is to conduct studies of the influence of physical factors (ultrasound, low-intensity laser irradiation) on the biological value of medicinal mushrooms Lentinula edodes, Ganoderma lucidum, Hericium erinaceus, Inonotus obliquus in pure culture and studies of the effectiveness of aroma precursors in the processing of food raw materials ( onion, potato). During the implementation of the project, the impact of physical factors (ultrasound, low-intensity laser irradiation) on the biological value of medicinal mushrooms Lentinula edodes, Ganoderma lucidum, Hericium erinaceus, Inonotus obliquus in pure culture and on the effectiveness of aroma precursors in the processing of food raw materials (onions, potatoes) was investigated. A method of increasing the biological value (content of melanin and polysaccharides in the biomass) of medicinal mushrooms was developed and experimental samples of the mycelium of medicinal macromycetes with an increased content of biologically active substances (melanin, polysaccharides) and recommendations for the use of aroma precursors and the possibility of labeling them as natural in food technology were obtained.
