Purpose of the work: The goal of the second stage of the work is to develop mycelial biomass of medicinal mushrooms (Hericium erinaceus, Lentinula edodes, Ganoderma lucidum, Inonotus obliquus) with increased biological value, as well as to develop methods of flavoring food raw materials (onion decoction or extract, potato juice) with an effect on precursors aroma and laboratory regulations. Research methods: mycological, microbiological, biochemical, spectroscopic, phytobiological. During the implementation of the project, mycelial biomass of medicinal mushrooms (Hericium erinaceus, Lentinula edodes, Ganoderma lucidum, Inonotus obliquus) with increased biological value was developed. A laboratory regulation for obtaining their biomass has been developed. The methods of aromatization of food raw materials (onion decoction or extract, potato juice) with influence on aroma precursors and laboratory regulations for obtaining food products for special medicinal purposes based on onions and potatoes have been developed. The obtained results will allow further development of the recipe for the encapsulated form of the composition based on medicinal mushrooms, technical conditions for food products for special medicinal purposes.
