The subject of the study are vegetable and fruit chips, and raw materials for chips, as well as their properties. The purpose of the study is to obtain vegetable and fruit chips with the specified quality indicators by scientific substantiation of their production technology. Research methods – the study tasks were solved using modern methods of theoretical and experimental research. Determination of qualitative and quantitative indicators of vegetable and fruit and chips was carried out in accordance with state standards. Experimental studies were carried out in laboratory conditions using special laboratory equipment and standard and developed methods. Statistical processing of experimental data was carried out using the methods of mathematical statistics and software MathCAD 14 and Microsoft Office Excel 2007. The current state of production of vegetable and fruit chips was analyzed; traditional technologies for the production of vegetable and fruit chips were described; physicochemical and organoleptic properties of vegetable and fruit (beet, carrots, zucchini, apples, pears, sublimated plant powders and chocolate) for chips and reasonable requirements for its quality for the production of a safe chips with high organoleptic indicators were analyzed; the production technology of vegetable and fruit multilayer and glazed chips was developed; qualitative and quantitative indicators of vegetable and fruit multilayer chips were studied.
