Purpose of the work: to develop a technology for the production of poultry meat products. In the process of carrying out the work, the physico-chemical parameters of semi-finished products were studied. It has been determined that natural semi-finished products produced from broiler chicken carcasses are characterized by a high level of protein that exceeds the lipid content. The microbiological parameters of semi-finished products were studied. It was found that the amount of MAFAM in vacuum-frozen samples at the end of the storage period turned out to be almost an order of magnitude less than in cooled samples, which makes it possible to significantly extend the shelf life according to microbiological indicators. The biological value of semi-finished products from broiler chicken meat has been studied. It was determined that the biological value of some of the studied semi-finished products is higher than the biological value of the carcass itself as a whole. A technology for the production of semi-finished poultry meat products and regulatory documentation have been developed, and an application for registration of copyright for the official work has been filed.
