Purpose of the work: to develop technology for fermenting meat and regulatory documentation for the production of high quality and safe meat. In the process of carrying out research work, a technological scheme for meat fermentation was compiled on the basis of analytical and experimental studies. Changes in quality and safety indicators at different stages of the technological process and the influence of various factors in the fermentation process on these indicators were studied. Taking into account the results obtained, a final scheme for the technological process of meat fermentation has been developed, ensuring the formation of proper indicators at all stages of production.
