The object of the NDR is gastronomic tourism in rural regions of Ukraine, especially in the Odesa region, and this will contribute to economic development, social and environmental aspects. The subject of the NDR is the development of gastronomic tourism routes for the ongoing development of rural territories. The work is aimed at developing various types of gastronomic tourism, such as wine, honey and cheese tourism, and its influx into the socio-economic development of rural communities. The main focus of the work is on the development of tourist routes that incorporate local gastronomic traditions and natural landscapes, creating new opportunities for attracting tourists. An important aspect is the analysis of the ecological storage development of gastronomic tourism and the establishment of the principles of development for saving natural resources. The work also follows how gastronomic tourism coincides with the development of local business, the creation of jobs and the improvement of infrastructure in rural areas. We end with practical recommendations for the development of gastronomic tourism that can be used to improve the competitiveness of the Odesa region as a tourist destination.
