The object of the study is changes in the quality of strawberry berries and plum fruits under the influence of pre-treatment with chitosan under different storage conditions. The purpose of the work is to create packaging to improve the safety and shelf life of food products. Research methods are standard organoleptic, physicochemical, biochemical, microbiological, special physical, planning and mathematical model. Based on the analysis of scientific sources, it was determined that compositions based on chitosan and LRS extracts can become universal means for protecting fruits during storage, which determined their choice for conducting research in this work. The studies have established: pre-treatment of fruits and berries with a chitosan solution significantly affects the content of organic acids and sugars when stored in a modified gas environment. An increase in the concentration of the solution revealed a positive effect on the density of fruit and berry tissues, which in the control at the end of storage was 0.10 kg/cm2; in contrast, in samples treated with the proposed solution, it was from 0.14… 0.24 kg/cm2. The proposed coating had a positive effect on the organoleptic indicators of fruits and berries, slowed down the development of black rot, the causative agent of which is the fungus Rhizopus stolonifera, increased resistance to damage by the fungus Aspergilus niger, prevented the development of diseases caused by the fungus Mucor, which allows reducing the percentage of product losses. Based on the results obtained, 3 technological schemes for pre-treatment of fruits and berries with a chitosan solution with extracts of medicinal herbs were developed. A technology for applying a film-forming composition to the surface of fruits and berries has been developed in two ways: 1st - immersing fruits and berries in baths with a working solution without containers, 2nd - immersing products in containers.
