Waxy substances are complex mixtures that include esters of high-molecular fatty acids and alcohols. A significant part of waxes is solid, elastic-plastic, sometimes even brittle substances at room temperature. Very few waxes have a liquid consistency at room temperature. The wax fraction of lipids also includes free fatty acids, alcohols, sterols, carbohydrates, etc. Waxes pass into the oil from the seed coat during pressing or extraction. The amount of waxes in the oil ranges from 0.01 to 0.3% by weight. The waxes present in the oil determine the degree of its transparency. The melting point of waxes ranges from 32−98°C. At low temperatures, waxes form a network of crystals in the oil, which negatively affects the appearance of the oil. In addition, waxes negatively affect the polishing filtration process and the properties of catalysts during hydrogenation. The process of extracting wax substances is called winterization (freezing). A method and instrumental support for controlling the content of wax inclusions in sunflower oil throughout the winterization process have been developed, with the possibility of express-metry at arbitrary, discretely small intervals of time. This allows you to determine the mass and dimensional indicators of these components and calculate their absolute and relative concentrations in samples, using objective instrumental methods and means, which eliminates operator error. The resulting picture is approximate for real physical systems due to the mutual interaction caused by multiple scattering of rays from particles and the presence of noise caused by an electronic measuring device.  Product Description popup.authors Melnychenko Dmytro S.
