In this regard, much attention should be paid to establishing key indicators that functionally reflect the links between food products and the characteristics of the territory of its production, both its environmental conditions and genetically determined features of the local grapes and its microbiome. Thus, the aim of the study is to evaluate modern methods of terroir identification using the characteristics of the landscape and ecological conditions, DNA identification of soil microbiota, yeast component of berry microbiome, and objects of a phytopathological complex of vineyards. The identification of the terroir can be further used to determine the place of origin of the product, its authenticity, and its naturalness, including for the production of promising in Ukraine grapes and wine products with an indication of origin. popup.description2  The research report is presented on 35 pages, contains 6 tables, 9 figures, 34 literary sources. The object of research is grape plantations of the Sukholimanskyi white variety in the study regions, as well as the soil under grape plantations of the Sukholimanskyi white variety on the territory of the Tairovske State Agricultural Enterprise and the Yalpug State Agricultural Enterprise. The purpose of the research is to determine the potential of soil microbiota for terroir characterization. Research methods are cartographic, theoretical generalization and comparison, expeditionary, comparative-analytical, visual (route) surveys, research of the microflora of soil sections by the fouling method (Kholodnyi method), phylogenetic analysis of the relationships between wine yeast strains. Research results. An analysis of the soil cover features of the Sukholimanskyi white grape variety plots in the Tairovske and Yalpug (Odessa and Bolgrad districts of Odessa region) was conducted. A certain difference in the content of organic matter (humus) was found both between the survey periods (1990 and 2010) and between the depth intervals (0-20 cm, 20-30 cm and 30-40 cm) depending on the studied plot. The phylogenetic relationships of wine yeast strains were assessed (clustering depending on the year and site of isolation). Soil samples were selected for the isolation of wine yeast strains, data on the nucleotide sequences of which will be added to the previous block (63 strains from berries and pomace). A methodical search for materials for modifying the glass fouling method according to Kholodny was conducted. It has been shown that glass can be replaced by polyethylene terephthalate film, which is flexible, strong and durable and can be used not only in soil, but also directly for studying microbial communities in plants.
