Rice of the Lazurit variety with an increased protein content in the grain and a reduced amylose content in the starch composition is characterized by low indicators of the total yield of groats and whole kernel. Rice of the Consul variety has high indicators of technological properties. The high background of nitrogen nutrition did not provide a further increase in this indicator. The increase in the yield of the whole kernel was facilitated by the application of increased doses of nitrogen fertilizers. The best physical quality indicators (membrane content and cracking) and technological properties were possessed by rice grain formed on crops of the middle sowing period (the first decade of May). Calculation of plasticity and stability indicators showed that the dependence of technological properties of grain on sowing dates is higher in varieties with a longer vegetation period – Consul and Marshal. Treatment of rice plants with the nutrient efficiency optimizer BLUTM N in the early tillering phase without the use of urea fertilization contributes to the formation of the highest grain yield of both studied varieties – 11.96 t/ha in the Fagot variety and 11.09 t/ha in the Korvet variety.
