Purpose of the work – scientific substantiation and development of a methodology for determining the shelf life and usability of oilseed cakes and meals. Research methods. The mass fraction of crude protein in absolutely dry matter, % – was determined according to DSTU 7169:2010. The mass fraction of moisture and volatile substances, % – according to DSTU 7621:2014. The mass fraction of fat and extractive substances in absolutely dry matter, % – according to DSTU 7458:2013. Acid value of oil, mg KOH/g – according to DSTU 7618:2014. Peroxide value of fat, % iodine – according to DSTU 8659:2016. Mass fraction of crude fiber in terms of absolutely dry matter, % – according to DSTU 8844:2019. Mass fraction of total ash, in terms of absolutely dry matter, % – according to DSTU ISO 5984:2004. Toxicity – according to DSTU 3570-97 with amendment (IPS No. 4-1999). The obtained results were processed using Microsoft Excel software packages. A methodology for determining the shelf life and usability of oilseed cakes and meals was developed.
