The object of the study is the processes of forming the chemical and technological quality indicators of Ukrainian and foreign hop varieties. The work used modern physical and chemical methods to determine the quality indicators of hop products. According to a comprehensive biochemical and technological assessment of the quality of hop products, the quality and purity of batches of type 90 hop pellets produced by hop processing enterprises in Ukraine were determined. The database of biochemical and technological indicators of hop products manufactured at hop processing enterprises in Ukraine in 2024 was supplemented to include such varieties as: Klon 18, Zlato Polissya, Slavyanka, Natsionalny, Zagrava, Perlyna, Ksanta, Alta, Magnum, Promin. The competitiveness of Ukrainian hop products in terms of quality indicators has been established, ensuring their compliance with international standards. namely, a comparison of the biochemical indicators of the finely aromatic varieties of Ukrainian selection Klon 18 and Zlato Polissya with the Czech variety Žatecký and the bitter variety Alta with the German variety Magnum. The economic effect of establishing the purity of batches of type 90 hop pellets produced by hop processing enterprises in Ukraine, with the introduction of a comprehensive biochemical assessment, is 3-5 thousand UAH per 1 ton of hop pellets.
