The basal diet was found to be deficient in α-linolenic acid and selenium, which justifies the inclusion of additional sources of these nutrients to ensure adequate biological and nutritional value of feeds and balanced animal nutrition. The use of linseed and sunflower oils as sources of ω-3 and ω-6 PUFAs effectively modified the lipid composition of the diet, significantly increasing α-linolenic acid intake and reducing the ω-6/ω-3 ratio to a physiologically optimal level. Such dietary modification had a positive effect on meat productivity: animals in the experimental groups demonstrated significantly higher average daily weight gains compared with the control group. The chemical composition of meat (moisture, protein, fat, and ash content) did not change significantly; however, a tendency toward increased fat content in the longissimus dorsi muscle of experimental animals was observed, which may be associated with enhanced lipid assimilation, improved feed efficiency, and increased dietary energy density. Supplementation with selenium in the form of sodium selenite compensated for its deficiency in the basal diet and resulted in a significant increase in selenium concentration in the liver and skeletal muscles. The content of ω-3 and ω-6 PUFAs in these tissues increased mainly due to higher ω-3 fatty acid levels, leading to a decrease in the ω-6/ω-3 ratio to 2.0–2.2:1, which indicates improved lipid metabolism, physiological balance, and better nutritional quality of meat. Combined dietary enrichment with PUFAs and selenium can be considered an effective strategy to enhance the biological (nutraceutical) value and overall quality of beef, meeting current requirements of healthy human nutrition.
