The implementation of the project will allow to create unique varieties of wheat and barley with improved nutritional status and varieties of drought-resistant triticale with improved technological characteristics of grain, which did not exist in Ukraine before popup.description2 The major target of the scientific project is the biofortification of the wheat and hull-less food barley grain content in the important for the human health nutrients and nutrition characters such as: soluble, insoluble and total dietary fiber, key minerals content and their availability, antioxidant grain activity, lowering of gluten proteins toxicity. To achieve this purpose several sub-projects were performed as listed below. 1/ Wheat and hull-less barley grain enforcement in the most important nutrition character such as grain antioxidant activity to be achieved by combination of the powerful pigments antioxidants anthocyanins (purple, blue and black), phytomelanins (purple) and carotenoids (yellow) in the grain pericarp aleurone layer and grain endosperm. 2/ Developmentof the hull-less grain barley of super-food status by the use in crosses of the specific mutation SBEIIa that blocking of the amylopectin molecular branching. The secondary mutation effect occurs in the considerable lowering of the grain starch content (from 65% to 18%), starch amylose content increase from 20-25% to 70%, beta-glucan content from 5% to 10%, vitamins+minerals content up to 2.5 - 3 times as much. However, mutation causes considerable grain endosperm reduction resulted in the grain yield penalty as high as 30% down. 3/ Development of the food hull-less barley with the grain of gluten-free status by the use a combination of three gluten biosynthesis blocking mutants such as Risø 1508, Risø M56 and R118. The combination of those mutants together in one genotype resulting in the total depression of the barley grain gluten protein biosynthesis. 4/ Development of the food hull-less barley with the low grain phytate content resulted in substantial decrease of the organic phosphorus in the bound form of phytates and corresponding increase of the mineral phosphorus content that bioavailable for human metabolism.
