The obtained results will allow to develop new and improve existing biochemical methods for assessing the genotypes of cereals and legumes for grain quality popup.description2 Biochemical and genetic characteristics for evaluating grain and vegetative mass of cereals and legume crops for the selection of genotypes with increased nutritional and feed value of grain (seeds) are proposed. The protein yield per unit area, the content of protein, storage proteins, starch, amylose, iron, manganese, zinc in grain, the percentage of nitrogen reuse in wheat genotypes including introgression lines of winter bread wheat obtained as a result of hybridization of introgression lines and amphiploids with the participation of Aegilops tauschi Coss. with modern varieties of PBGI-NCSCI breeding, lines with the GPC-B1 gene were studied. The obtained results showed a significant positive effect of alien genes on the studied biochemical characteristics of grain quality. The studied lines can be considered as donors of economically valuable traits, in particular increased protein content and other biochemical characteristics, and can be involved in breeding programs to improve the quality of wheat grain. The main biochemical indicators characterizing the quality of soybean and pea seeds (content of protein, 11S and 7S globulins, their component composition, protein yield per unit area, content of fat, flavonoids, activity of trypsin inhibitor, lipoxygenase, urease) have been substantiated and developed. The obtained results are recommended for implementation in breeding programs for the creation of pea and soybean varieties for the production of high-quality food products.
