The analysis of expenses of energy and losses of vegetative production is made at use of various technologies of storage. Results of researches and standard documents in the field of refrigerating processing and meat storage in the frozen and cooled kind are considered. The information analysis has shown, that the increase in duration of process of cooling of beef leads to increase of losses in 2 … 3 times, and pork coolings - in 1,5-2 times. It is established, that in the developed countries freezing (cooling) of hulks, semihulks, and quarter timbers is stopped in connection with irrational use of cargo spaces. It is established, that fall of temperature level allows to prolong periods of storage of meat production from 5 till 18 months. By consideration of technologies of storage of fish production the basic attention is given coastal refrigerators where consequences of transportation of fish from extraction places should be considered. Criteria of an estimation, in which number universality of assortment of production, energy expenses, specific cost, rates of deterioration are offered. It is established, that application of identical technologies on refrigerators of a different design and level of physical deterioration does not allow to receive identical standard indicators. Principles of methodology of a choice of technologies of storage of vegetative production, animal industries and poultry farming production, and also fishing industry production are developed, and the register of technologies of storage of the specified kinds of production is generated. The received results confirm an urgency of the performed work and necessity of its further planned performance. Experimentally, the states of water and their change are certain the method of NMR during the leadthrough of processes of freezing and unfreezing of berries of vine of sort Moldova, meat of beef and pork, pork fat, temperature dependence of part of the frozen out water is built for these types of food raw material.
