Terms of division of phosphotides with detection in UV range certain by methods HPLC. Possibility of application the reversephase and normalphase modes was investigated by HPLC. The phosphotides exit times during the analysis of standard mixture are determind and the phosphotides of deoil sunflower lecithin are identified at times retaining of corresponding components of standard mixture. Methodology of determination of PC, PE, PI by HPLC at the normalphase mode was investigated and quantitative content of PC, PE, PI in the lecithin of sunflower was determined. The components of lecithin of sunflower are identified by means of tandem mass-spectrometry method and fat acids components composition was certain. The method of homogenization (extrusions) at corresponding terms is get "empty" liposomes. The dimension of obtained liposomes by the methods of atomic force microscopy and laser photon-correlation spectroscopy were determined.
