Pamyat Khudoerko and wheat (Triticum aestivum L.) of cv. Lutescens 329 (cold-resistant) and Bezostaya 1 (cold-sensitive) seedlings on activity of antioxidant enzymes and content of osmolytes in them, and also on their resistance to the oxidative stress (OS) agents iron (II) sulfate and hydrogen peroxide was studied. Rye seedlings differ from those of wheat with the presence of constitutive frost resistance and higher resistance to action of FeSO4 and H2O2. Herewith the unhardened rye seedlings had a high content of proline, anthocyanins and higher guaiacol peroxidase (GPO) activity. Cold hardening increased activities of superoxide dismutase (SOD) and GPO, contents of anthocyanins, proline and sugars in seedlings of rye and cold-resistant wheat cultivar. In cold-sensitive wheat cultivar Bezostaya 1 there was marked an increase in SOD and GPO activities and proline content after hardening, but absolute values of these parameters were significantly lower than those of rye and cold-resistant cultivar of wheat. Besides, cold-sensitive wheat cultivar was not showed significant rise of anthocyanins and sugars content in answer to hardening. After the cold hardening, seedlings of rye and cold-resistant cultivar of wheat had raised resistance to iron (II) sulfate. At the same time the cold-sensitive cultivar of wheat has not developed resistance to FeSO4 and H2O2 action. The conclusion was drawn on connection between frost resistance of winter cereals and their resistance to oxidative stress that depends on level of low-molecular-weight compounds and antioxidant enzymes activity in tissues.
