This thesis aims to inves- tigate the use of sales forecasting models to improve the accuracy of demand pre- dictions in grocery stores and ultimately reduce food waste. We consider the main factors affecting sales and thoroughly analyze the historical sales data from a se- lected grocery store. The data is preprocessed to handle outliers, missing values, and seasonality. Different sales forecasting models are implemented and compared accuracy metrics.
