Показано доцільність введення до раціону спортсменів продукції з використанням авокадо, як джерела цінних макро та мікронутрієнтів. У другому розділі «Організація, предмети, матеріали та методи дослідження», визначені об'єкти, матеріали й методи дослідження. У третьому розділі розроблено і обґрунтовано технологію виробництва та асортимент холодних страв для харчування спортсменів з ви-користанням авокадо, досліджено етапи, параметри технологічного процесу, визначено послідовність та взаємозв'язок між технологічними операціями. Досліджено основні показники якості та безпечності нової продукції, які відповідають нормативним документам. Проведено моделювання технологічного процесу. Оцінку ефективності технологічних рішень представлено в розділі чотири. In the third chapter, the production technology and the assortment of cold dishes for nutrition of athletes using avocado are developed and substantiated, the stages and parameters of the technological process are investigated, the sequence and relationship between technological operations are determined. The main indicators of quality and safety of new products, which correspond to regulatory documents, were studied.
