Кривий Ріг. У ході виконання кваліфікаційної роботи було розглянуто основні принципи розроблення меню та інструменти його оптимізації; розглянуто основні принципи складання меню, як маркетингового інструменту продажу страв; висвітлено сучасні підходи до розроблення меню; представлено аналіз меню діючих закладів ресторанної індустрії міста Кривий Ріг, а саме кав'ярні «AromaKava»» та кафе «Кав'ярня»; приведено характеристику основних складових концепції закладу ресторанної індустрії, що досліджується, а саме сімейна кав’ярня-пекарня «Франс.уа» за визначеної ідеї; описано загальну ідею закладу (концепцію кухні, середній чек); основні групи відвідувачів; визначено популярність страв в сімейній кав’ярні-пекарні «Франс.уа» (такими є борошняні кондитерські вироби) і включено їх до складу меню. Обґрунтовано та розроблено проект меню для сімейної кав’ярні-пекарні «Франс.уа», що функціонує в м. Кривий Ріг та розроблено проєкт дизайну меню і його оформлення. Проведено оцінку ефективності прийнятих рішень The purpose of the work is the development and implementation of organizational and technological measures to create a menu for the format of a family cafe-bakery operating in the city of Kryvyi Rih. In the course of the qualification work, the main principles of menu development and tools for its optimization were considered; the main principles of creating a menu as a marketing tool for selling dishes are considered; modern approaches to menu development are highlighted; an analysis of the menu of the operating establishments of the restaurant industry in the city of Kryvyi Rih, namely the coffee shop "AromaKava" and the cafe "Kavyarnia" is presented; the characteristics of the main components of the concept of the researched restaurant industry establishment, namely, the family cafe-bakery "France.ua" based on a certain idea, are given; the general idea of the establishment is described (kitchen concept, average check); main groups of visitors; the popularity of dishes in the family cafe-bakery "France.ua" was determined (these are flour confectionery products) and included in the menu. The menu project for the family cafe-bakery "France.ua" operating in the city of Kryvyi Rih was justified and developed, and the menu design project and its design were developed.
