В рамках інноваційного розділу розглянуто сучасні тенденції в розробці технології ковбасних виробів функціонального призначення. В рамках дипломного проекту проведено аналіз ринку сировини, наведено маркетингове дослідження щодо актуальності проектування лінії з виробництва варених ковбас та впровадження її на підприємстві. Обґрунтовано та розроблено асортимент продукції, технологічний процес виробництва продукції наведено у вигляді технологічних схем, виконано проектно-технологічні розрахунки з визначення необхідної кількості сировини для виконання виробничої програми, підбору технологічного обладнання. Здійснено проектування апаратурно-технологічної лінії з виробництва варених ковбас, яку впроваджено в рамках діючого підприємства. Представлено заходи з охорони праці на підприємстві та екологічної безпеки функціонування підприємства. Результати досліджень пройшли апробацію в умовах освітнього процесу. The bachelor's qualification work is devoted to the development of the technology of functional sausage products and the project of a technological line for the production of cooked sausages with a capacity of 5 tons per shift. In the framework of the innovative section, modern trends in the development of the technology of functional sausage products are considered. As part of the diploma project, an analysis of the raw material market was carried out, a marketing study was given regarding the relevance of designing a line for the production of cooked sausages and its implementation at the enterprise. The range of products has been substantiated and developed, the technological process of production of products is given in the form of technological diagrams, design and technological calculations have been made to determine the necessary amount of raw materials for the implementation of the production program, selection of technological equipment. The design of the equipment and technological line for the production of boiled sausages was carried out, which was implemented within the framework of the existing enterprise. Measures for labor protection at the enterprise and environmental safety of the enterprise's operation are presented.
