В результаті проведені комплексні проектно-технологічні розрахунки, а саме розрахунок сировини, готової продукції, допоміжних матеріалів та тари; розрахунок та добір технологічного обладнання для виробництва ковбасних виробів. Проведені розрахунки площ функціональних груп приміщень та забезпечення підприємства основними ресурсами. Розроблено організаційні принципи діяльності підприємства. При проведенні екологічної оцінки виробництва ковбасних виробів було виявлено, що забруднювачем як атмосфери, так і води є підприємство і воно належить до виробництв, що становлять значну екологічну небезпеку. При розгляданні антропогенного забруднення сировини та матеріалів, які використовуються, також були розглянуто основні шляхи забруднень і надані рекомендації щодо зменшення впливу цих факторів. Встановлено, що при виконанні всіх вимог виробництва, виготовлення ковбасних виробів є менш шкідливим і небезпечним з точки зору екології As a result of carrying out a technical and economic substantiation regarding the demand for sausage products, the range of products was determined, the analysis and selection of the technological scheme for the production of sausage products was carried out, and the main and auxiliary technological equipment was selected. As a result, complex design and technological calculations were carried out, namely the calculation of raw materials, finished products, auxiliary materials and containers; calculation and selection of technological equipment for the production of sausage products. Calculations of areas of functional groups of premises and provision of the enterprise with basic resources were carried out. The organizational principles of the enterprise have been developed. When carrying out an environmental assessment of the production of sausage products, it was found that the enterprise is a polluter of both the atmosphere and water, and it belongs to the industries that pose a significant environmental hazard. When considering anthropogenic pollution of raw materials and materials used, the main ways of pollution were also considered and recommendations were given to reduce the impact of these factors.
