Сучасність напрямку пошуку ефективного інструменту такої оцінки для зернових ресурсів пояснюється високою зацікавленістю виробників і обізнаністю споживачів. Питання полягає саме в комплексному підхіді до оцінювання якості хліба – від зерна через борошно до готової продукції. The importance and relevance of the conducted research is due to the increasing requirements of all participants in the process of grain processing and consumption (agriculturalists, flour millers, bakers and consumers of bakery products) for a comprehensive assessment of the quality of grain, flour and bread. The modernity of the direction of finding an effective tool for such an assessment for grain resources is explained by the high interest of producers and consumer awareness.
