В ході виконання проекту було проведено маркетингове дослідження споживання свинних виробів та делікатесної продукції. В ході дослідження було виявлено, що хамон досить популярний серед населення, проаналізовано марки продукту, які користуються попитом і визначено найбільші торгівельні мережі, які представляють продукт. В рамках кваліфікаційної роботи проаналізовано вміст вологи в окремих шматках хамону. Вибрано та обґрунтовано основний асортимент продукції зі свинини, розраховано витрати основної сировини та допоміжних матеріалів, здійснено підбір технологічного устаткування виробництва. Результати досліджень пройшли апробацію з участю автора в умовах освітнього процесу. The bachelor's qualification work is devoted to the analysis of the modern market and technologies for the production of ham, as well as the project of a technological line for the production of raw pork products with a capacity of 4 tons per shift. During the implementation of the project, a marketing study of the consumption of pork products and delicatessen products was conducted. During the research, it was found that jamon is quite popular among the population, the brands of the product that are in demand were analyzed and the largest retail chains that represent the product were identified. As part of the qualification work, the moisture content in individual pieces of hamon was analyzed. The main assortment of pork products was selected and substantiated, the costs of the main raw materials and auxiliary materials were calculated, and the selection of technological production equipment was carried out.
