Ного цінність обумовлена наявністю в ньому алкалоїду кофеїну, ароматичних речовин і хлорогенової кислоти. Кава - це смаковий продукт, що готується з обсмажених насіння вічнозеленого кавового дерева роду Coffea. Батьківщиною кавового дерева є південно-західна частина Ефіопії - область Кефа (звідси й назва кава). Тонізуюча дія кави залежить від особливих речовин - алкалоїдів, що знаходяться в зернах кавового дерева. Невелика доза алкалоїдів кави швидко порушує діяльність нервової системи, підсилює роботу серця, завдяки чому і відновлюється працездатність. Метою дипломної роботи було дослідження сучасною асортименту, проведення експертизи та визначення особливостей імпорту кави. В роботі розглянуто наступні питання: розглянути ринок кави в Україні; дати характеристику сировини для виробництва розчинної кави; розглянути харчову цінність та хімічний склад готової продукції; розглянути класифікацію та асортимент кави; вивчити вимоги до якості кави згідно нормативних документів; визначити методи фальсифікації і ідентифікації натуральної кави; провести дослідження якості натуральної кави за комплексом ознак; визначення особливостей імпорту кави; визначити стан охорони праці та безпеки в надзвичайних ситуаціях в досліджуваному магазині. Дослідження якості показали, що досліджувані зразки кави відповідають вимогам державних стандартів. Natural coffee is a popular and beloved tonic drink by the population of different countries. Its value is due to the presence of caffeine alkaloid, aromatic substances and chlorogcnic acid in it. Coffee is a flavor product made from the roasted seeds of the evergreen coffee tree of the genus Coffee. The homeland of the coffee tree is the southwestern part of Ethiopia - the Ke fa region (hence the name coffee). The tonic effect of coffee depends on special substances - alkaloids, which arc found in the beans of the coffee tree. A small dose of coffee alkaloids quickly disrupts the activity of the nervous system, strengthens the work of the heart, thanks to which work capacity is restored. The aim of the thesis was to research the modem assortment, carry out an examination and determine the peculiarities of coffee imports. The following questions are considered in the work: consider the coffee market in Ukraine; give a description of the raw materials for the production of instant coffee; review the nutritional value and chemical composition of finished products; consider the classification and range of coffee; study the requirements for the quality of coffee according to regulatory documents; determine methods of falsification and identification of natural coffee; conduct a study of the quality of natural coffee according to a complex of signs; determination of features of coffee import; to determine the state of labor protection and safety in emergency situations in the investigated store.
