Об’єктом дослідження є спосіб розмороження замороженого м'яса морського гребінця, технологія отримання маринованого м'ясного напівфабрикату із м'яса морського гребінця, технологія варіння м'яса морського гребінця, технологія виготовлення кулінарних страв з використанням м'яса морського гребінця. Предметом дослідження є морський гребінець, м'ясо, лимон, хеномелес, журавлина, сік, оцет, розморожування, маринування, варіння, різотто. Розроблено рецептури нових кулінарних виробів з використанням м'яса морського гребінця та технологічні картки на нові страви. The purpose of the work is to develop technologies for food products from sea scallop meat, which involves studying technological operations that affect the functional and technological properties of shellfish and the use of sea scallops in culinary technology. The object of the study is the method of defrosting frozen sea scallop meat, the technology for obtaining marinated semi-finished meat products from sea scallop meat, the technology for cooking sea scallop meat, and the technology for preparing culinary dishes using sea scallop meat. The subject of the study is sea scallops, meat, lemon, henomeles, cranberries, juice, vinegar, defrosting, marinating, cooking, and risotto.
